Jam - Strawberry

Our strawberry jam is made with 70% fruit, well above what a standard jam contains. That high fruit content determines everything: the taste rests on the strawberry itself rather than on sugar, so you get the full, ripe sweetness of the fruit and not merely sweetness. Strawberry is the most requested jam flavour and at the same time the most demanding, because there is no spice or second fruit to hide behind. On bread, with yoghurt or as a filling in pastry, that pure fruit flavour comes into its own.
