The cuberdon is our house specialty: a purple sweet with a raspberry flavour and a liquid centre, still made by hand. We shape it in its original form, that of a mask, inspired by Ensor's Jean qui rit and Jean qui pleure.
The larger surface area of this shape keeps our cuberdons fresh for longer than the more common versions. Inside is the characteristic liquid centre, wrapped in a thin, lightly crisp crust that only gives way when you bite into it. They're made with gum arabic and are therefore entirely gelatine-free. Anyone who knows the cuberdon as the Ghent neuzeke will find the authentic taste here, in the shape it originally had.
