Raspberry hearts

Raspberry hearts are red soft gums in a heart shape with a raspberry flavour, finished with a layer of sugar. The sugar gives a grainy outside that contrasts with the soft gum beneath, while tempering the tartness of the raspberry. The flavour is distinctly fruity and instantly recognisable. Their heart shape makes them a standing choice for Valentine's Day, communions and weddings, where they're often given by the kilo in bags or boxes. They're made with gum arabic instead of gelatine.
