Fruits de nice

Fruits of Nice are hard boiled fruit sweets with a soft centre, shaped like small fruits and in various colours. What sets them apart is the contrast: hard on the outside, soft inside, so you taste the boiled sugar layer first and then the fuller fruit filling. Each colour and shape stands for a different fruit, so a bag always offers variety. The name refers to the southern French tradition of candied and imitation fruit as a delicacy, from which these sweets take their shape.
