Fudge is a soft brown caramel in cubes, the typically English caramel. Where Belgian and French caramels are often firmer and more toasted, fudge is creamier and grainier in structure, because the sugar is deliberately allowed to crystallise slightly during cooking. That gives the characteristic melt: the cube breaks down on the tongue rather than staying chewy. Fudge contains dairy and is therefore not vegan, unlike most of our sweet range.
