Spice cookies are small, hard biscuits carrying the spice blend that also gives our speculoos and gingerbread their flavour: cinnamon, nutmeg, clove and ginger. The size is deliberately small, since they aren't eaten one at a time but by the handful. Traditionally tied to the feast of Saint Nicholas, when they were scattered, that association has never faded in Flanders and the Netherlands.
