Honey biscuits

Our honey cookies are crisp biscuits baked with honey. Honey behaves differently from sugar in a dough: it caramelises at a lower temperature and brings, besides sweetness, a floral and lightly spiced note that sugar cannot deliver. That gives the biscuit its golden-brown colour and a flavour fuller than the simplicity of the recipe suggests. Crisp to bite and particularly suited to tea or coffee.
