Tutti Frutti

Rock candies are round hard boiled sugar sweets with fruit flavours, carrying a flower motif worked through the entire sugar mass. The motif isn't printed but sits within the sweet itself: the sugar mass is built up in layers and pulled out, so every piece cut from it shows the same picture. It's one of the most demanding techniques in traditional confectionery and the result is visible at once. The fruit flavours are full and vary by colour.
