Violets

Violets are purple hard boiled sugar sweets with a violet flavour, cast in the shape of a flower. Where our violet liquorice is a firm gum, this is a boiled sweet that dissolves slowly and gives up its delicate floral flavour gradually. Violet sweets are among the most refined classics of European confectionery and were long seen as a ladies' sweet, something to take with tea. The flower shape and purple colour make them instantly recognisable in a mixed bowl.
