Mint fondants are light blue-green squares with a mint flavour, meant to melt on the tongue rather than be chewed. That is exactly what sets them apart from our other mint sweets: the fondant breaks down slowly and releases the mint gradually, without the firm bite of a boiled sweet. The texture is softer than most of our gums, which makes them pleasant after a meal or with coffee. They're made with gum arabic instead of gelatine.
