Mexican biscuits are chocolate discs with a piece of nougatine set in them. Nougatine is caramelised sugar with almond, broken into small crisp pieces, and that is exactly what gives these discs their character: beneath the smooth chocolate layer sits an unexpected crunch that lingers. The contrast between smooth and crisp is one of the oldest techniques in chocolate work and here it appears in its simplest form. Contains nuts.
