Salted caramel is a soft caramel with a salted caramel flavour, made with real butter. The salt does more here than add taste: it tempers the sweetness and brings out the toasted, lightly bitter side of the caramel, making the whole taste fuller than an ordinary caramel. The butter provides the creamy roundness that caramels based on vegetable fat lack. The texture is soft, so the flavour spreads immediately rather than being released slowly as in a hard caramel. Over recent years salted caramel has gone from a Breton speciality to one of the most requested flavours in confectionery.
