Jujube is a black hard liquorice gum in irregular squares. The shape follows from the making: the liquorice mass is first cast as a slab and only then broken into pieces, so every piece is slightly different. That handmade character is immediately visible and typifies the old way of making liquorice. The gum is firm and dissolves slowly, so the liquorice flavour lingers. Within our liquorice range jujube belongs to the firmest varieties, as against soft types such as the liquorice jojos.
