Salmiak is a hard boiled liquorice sweet in white and black, small and round in shape. Salmiak is the name for ammonium chloride, the ingredient that gives salty liquorice its characteristic sharp, lightly tingling taste. In Scandinavia and the Netherlands it's a cult flavour with a devoted following, while elsewhere it often takes getting used to. Because the sugar mass is boiled hard, the sweet dissolves slowly and the flavour builds gradually. Anyone new to salty liquorice is better off starting with one of our sweet varieties.
