Soft nougat is the supple version of this classic delicacy: the nougat mass is cooked for less time than for hard nougat, which keeps it soft and slightly elastic. You bite into it rather than break it, and the flavour comes through at once: sweet, lightly honeyed, with the nuts worked through the mass. Nougat is one of the oldest sweets of the Mediterranean and reached our regions via Spain and southern France, where it appears above all on end-of-year tables.
